In my view, Trini had it all wrong both about love and lemons, but especially about lemons when he sang ‘the fruit of the lemon is impossible to eat.’ We’ve come a long way from then and lemons, especially Meyers are the core of a lot of cuisine today.
In our area, we have also moved from red jug wine to the finest Pinot Noir. We now have access to organic produce that was not available in Trini’s day. DMS Organic Meyer Lemons are wonderful to eat in many different dishes. One of my favorites is to replace vinegar with fresh Meyer lemon juice in salad dressings. This makes a much less acidic dressing that will bring out the flavors of the ingredients without overwhelming them.
