When cooking with DMS Meyer Lemons, you can use the whole lemon knowing that the skin is free of sprays, wax or detergent that conventional lemons might have. Even some of the ‘organic’ lemon producers wax their fruit and use ‘organic’ sprays so you will want to check this out. (We do not spray our trees, don’t wax the fruit or wash in detergent.) To use the whole lemon, simply rinse the lemon in fresh water and towel it dry. Then peel or grate the skin to reveal the inner fruit, which can be juiced for cooking sauces or making salad dressing (one of my favorite ways to use DMS Meyer Lemons.)
There are plenty of things to do with the peel including making a finely grated fresh zest, which can be used to garnish salads, fish, fowl and other dishes. If you are not ready to use all of the zest, just put it in a sandwich bag and refrigerate it until you are. Try to get most of the air out so that it will stay fresher.
